Cheesecakes

A smooth and creamy cheesecake makes a great dessert choice because it can be made well in advance of the party and
chilled or frozen up to one month.  Simply thaw in the refrigerator overnight.
Luscious Creamcheese Cake

Ingredients:

2 lbs (4  -  8oz packages) Cream Cheese at room temperature
1 ½ Cups Sugar
4 Eggs
¾ Cups Milk
2 Cups (1 pint) Sour Cream
4 Tablespoons self-rising flour
1 Tablespoon Vanilla
Graham Cracker Crumbs

Directions:
Let cream cheese stand at room temp for about 1 hour.  

Graham Cracker Crust
Put 15 crackers in a plastic bag and roll with rolling pin until crushed.  Put in bowl,  add 1/8 lb (4T) melted
butter or margarine.  Blend with fork until all crumbs are damp and spread on bottom of 9 ½ inch spring
form pan.


Beat cheese in a deep bowl.  Add sugar and mix.  Put eggs in, one at a time, beating after each addition.  
Add milk, sour cream, flour, and vanilla, beating after each addition.  Pour mixture into 9 ½ inch spring
form pan that has been lined with graham cracker crumbs.  Bake 1 ¼ hours at 375 degrees.  Cake will
drop some.  Remove from oven and let cool ½ hour.  Remove sides from pan and refrigerate cake.  
Overnight is best.
Lemony Delight Cheesecake
This is a refreshing cheesecake with a light, lemon flavor.  It is easy to prepare, but plan enough time to let
it set in the refrigerator.

Prep: about 15 minutes, refrigerate 4 hours

Ingredients:
16-18 Graham Crackers (crushed to fine consistency) (2 3/4 Cups)
1 stick unsalted butter, melt
1 - 8 ounce package of cream cheese
1/4 cup sugar or splenda
2 cups milk
1 small package of instant lemon pudding
8 x 8 baking dish sprayed with cooking spray


Directions:
Use a large bowl to mix together 1/2 of the graham cracker crumbs, melted butter, and sugar.  Press the
crumbs into the bottom of baking dish and refrigerate for 1 hour.

When the baking dish has been in the refrigerator for 1 hour, place the cream cheese in a large bowl.  Add
1/2 cup of milk and mix with a hand mixer on medium speed.  Gradually add the remaining milk and
pudding.  Mix for 1 or 2 minutes until smooth and creamy.

Pour pudding mixture into the crust and sprinkel with remaining graham cracker crumbs on top.  
Refrigerate for at least 3 hours.

Cut into squares and serve.

Savory Cheesecakes

Most of us think of a cheesecake as a
sweet treat, but there are many
recipes for savory cheesecakes that
bring a whole new twist to enjoying that
cheesy flavor.  "Savory" means that it
includes salt, herbs, or vegetables,
and does not contain sugar.  You
would eat a savory cheesecake with
wine, or spread it on a cracker.
